Jeho režisérsky debut bol akčný sci-fi film Vymáhači z roku 2010, v ktorom hrajú Jude Law a Forest Whitaker.
V televízii pôsobil ako režisér v seriáloch Awake, Fringe, Dr. House a Mind Games.
V roku 2015 zrežíroval Sapochnik dve časti piatej série fantasy seriálu Game of Thrones: "The Gift" a "Hardhome". O rok neskôr zrežíroval aj posledné dve časti šiestej série: "Battle of the Bastards" a "The Winds of Winter". Všetky tieto časti sú kritikmi a divákmi oceňované a Sapochnik získal cenu Emmy za najlepšiu réžiu dramatického seriálu za časť "Battle of the Bastards".[1]
